Zoodles (zucchini pasta)

: 1 ½ green, ½ blue

Ingredients:

4 medium zucchini

Hot water

1 cup pasta sauce, warm

2 Tbsp finely shredded fresh basil

2 Tbsp grated parmesan cheese

Instructions:

  1. Using a vegetable peeler, cut each zucchini into lengthwise strips about 1/8 inch thick. Turn zucchini slightly after cutting each strip to work evenly around the outside, stopping when you hit the seeds in the core. Discard cores. Cut slices lengthwise into 1/2 inch ribbons. Set aside.
  2. Boil water in steamer or large sauce pan. Reduce heat to medium-high. Place zucchini in steamer basket and cook for 2-3 minutes, or until tender. Remove from heat.IMG_3003
  3. Divide zucchini evenly between 4 serving plates; top with your favorite pasta sauce and sprinkle with basil and parmesan cheese.
