Not long ago, I would have never even considered eating Swiss Chard. As a matter of fact, I am not sure I even knew what it was. Now, it is one of my favorite greens. And, the kids like it too.
Ingredients:
1 bunch of Swiss Chard
2 Tbsp Olive Oil
2 Cloves of garlic, finely chopped
1/3 cup raisins
2 Tbsp balsamic vinegar
1/4 cup pine nuts
Instructions:
1. Wash Swiss Chard — shake off extra water. do not dry.
2. Trim off stems and chop into 1/2 inch pieces, set aside. Chop leaves into 1 inch slices.
3. Place oil in a skillet over medium heat. Toss in garlic and swiss chard stems. Saute until the stems start to soften slightly.
4. Turn in leaves, cover to steam. Once wilted and slightly softened, stir in raisins and pine nuts. Cook for another minute or two.
5. Drizzle and stir in the Balsamic vinegar. Serve warm.
1 cup = 1 Green, 1/2 Tsp
