When you hear the word “salad”, do you immediately think of lettuce and leafy greens? I think most of us do. But really, anything that involves multiple veggies can be considered a “salad.”
So, if a bowl of leafy greens is getting rather boring, try these alternatives:
- A Wrap– Just take your salad fixings and wrap them up in rice paper or a whole grain tortilla. This simple tip makes a salad feel more like a sandwich.
- Chop it– Before adding dressing, chop all of the salad fixings into bite size pieces. I am not sure why, but it just feels different eating a salad this way.
- Scoop it– Instead of using a fork, scoop your chopped salad with baked chips or whole-wheat crackers.
- Make it “green-less”– Take cucumbers, peppers, carrots, tomatoes, pea pods, onions, and all your other favorite salad fixings, mix them together just like a salad without any greens. With all the fresh veggies in the stores and gardens, this is a delicious alternative.
- Sub in grains–Substitute in a whole grain starch lie quinoa, faro, or brown rice for the leafy greens.
Be creative, have fun….see what kind of “salad” you can make.
