Asian Vegetable Stir Fry

photo 3This quick and easy veggie dish is one of our favorites. You can basically use any vegetables you have in the kitchen. Prep and cooking time is about 20 minutes.

2 Tbsp coconut oil

4 cloves garlic, chopped

2 Tbsp chopped ginger

2 medium carrots, cut into diagonal slices

2 cups broccoli florets

1/2 cup sliced red bell pepper

3 stocks of bok choy

1 small onion, chopped

3 tsp sesame oil

2 Tbsp Braggs Liquid Aminos

Instructions:

Chop vegetables and set aside.photo 1

 

Heat coconut oil in wok over high heat. IMG_2411

 

Add garlic, ginger, carrot, onion, cook stirring constantly for 1-2 minutes.

Add broccoli  and cook. Stir frequently for 4-5 minutes.  Add bell pepper an botchy. Reduce heat to medium. Cook for another 2-3 minutes.

Turn off heat. Add sesame oil and Bragg Aminos.

  • This is really good! The coconut oil is worth it’s high price. It gives a slightly sweet taste. Karen gives exact measures, but you don’t need to be that exact and add stuff if you want. We sometimes add cauliflower and don’t always have bok choy on hand. Try this, it will become a regular player on your dinner table.
