Every year, Mark’s family has an hors d’oeuvre contest at Christmas. This year, we won’t be gathering with the extended Meuwissen clan, but we are keeping up this tradition with our immediate family. I have been charged with a healthy appetizer. My choice is one of our favorites – Fresh Spring Rolls. I might not win, but that’s ok. 😊
Fresh Spring Rolls
Ingredients
- 2 ounces vermicelli
- 8 rice wrappers
- 8 large cooked shrimp – peeled, deveined and cut in half the long way
- 4 oz cooked turkey breast thinly sliced in ½ inch strips
- 2 Tbsp fresh Thai basil
- 3 Tbsp fresh mint leaves
- 3 Tbsp chopped fresh cilantro
- Lettuce chopped
- Thinly sliced cucumbers
- Julienned carrots
Instructions
Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain.
Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves, some turkey, a handful of vermicelli, basil, mint, cilantro and lettuce, and vegetables of choice. Leave about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper. Have everyone make their own to their liking. Have fun and be creative!
Dipping Sauce
Instructions:
- ¼ cup fish sauce
- ¼ cup sugar
- ⅓ cup water
- 2 Tablespoons lime juice – freshly squeezed, about half a lime
- 2 teaspoons rice wine vinegar
- 1 clove garlic – finely diced
- Dash of pepper chili flakes
- 1 Tablespoon shredded carrot
- 1 teaspoon chili garlic sauce

Mix the all the ingredients together. Then, dip the wrap into the sauce…Enjoy!
