As we head into these hot summer days, a salad for lunch or dinner simply sounds good. It is easy, filling and if made right, nutritious.
About a year ago, we started making our own salad dressings. It takes only a few minutes and can be made with just a handful of ingredients. By making the dressing ourselves, we avoid MSG, high fructose corn syrup, over processed oils, and soy. And the best part, it tastes good!
My favorite:
4 oz olive oil
2 oz red wine vinegar
2 Tbsp lemon juice
1 tsp Himalayan salt
1 tsp pure maple syrup or raw honey
1 Tbsp fresh herbs — basil, thyme, dill, or cilantro (less if dried)
Shake or mix well in a small blender. Refrigerate. If oil hardens, heat for a few seconds in the microwave.
